TWIN RIVERS: Born between fire and water

This coffee was born between fire and water. Between two majestic volcanoes and two crystal clear rivers, it grows in fertile volcanic soil once home to the Huetar people. Today, Rodolfo and Ariela Boillat uphold this legacy at Finca Carrizal with deep respect for the earth and with emphasis on environmental consciousness. Every cup tells a story of its origin. This coffee is shaped by volcanic landscapes, flowing rivers, rich biodiversity, and the dedication of the people who nurture each coffee plant.

THE ORIGIN

Costa Rica, Finca Carrizal, Rodolfo & Ariela Boillat

The producers at Finca Carrizal are Rodolfo & Ariela Boillat. Rodolfo is a third generation coffee producer, and now proudly runs the farm with his daughter, Ariela. The finca was established in 1890 and is located between two majestic volcanoes, Poas and Barva. The two rivers naturally borders the coffee farm, which shares space with 15% of natural forest. Rodolfo and Ariela place emphasis on environmental consciousness, striving to minimize their ecological footprint, from farming to harvesting.

The farm is located at around 1500 meters above sea level, having perfect conditions for growing high quality coffees, with vivid summer days and chilly nights. All cherries are handpicked when super ripe, go through additional selection and are carefully milled on spot.

THE PROCESS

Red Honey process. This method is a delicate balance between the washed and natural processes, demanding great precision. After the coffee cherries are harvested, the outer skin is removed, but a significant portion of the sticky, sugar-rich fruit pulp (the mucilage) is deliberately left on the seed.

For a "Red" honey, the beans are dried under partial shade with roughly 50% to 75% of this mucilage intact. This careful environment allows the mucilage to oxidize and darken to a deep reddish hue. Rather than the seed "absorbing" sugar, the presence of the fruit layer during the drying phase facilitates a slow, controlled fermentation. For Twin Rivers, this has resulted in a clean cup, with some acidity, fruity flavors, and subtle tannins.

THE VARIETY

San Isidro is a coffee variety grown in Costa Rica, associated with the Sarchimor group of coffee hybrids. Sarchimor varieties originate from crosses involving Villa Sarchi and Timor Hybrid, combining compact plant growth with resistance to coffee leaf rust. These characteristics make them valuable for coffee cultivation and in the right growing environment, altitude, and post-harvest processing they can create a high quality cup. In this cup, this San Isidro lot offers a distinctive combination of starfruit, pear skin, and vanilla. Together, these characteristics create a clean, fruit-forward cup with an elegant balance of freshness, subtle sweetness, and complexity.

PACKAGING

We believe that the care dedicated to sourcing and roasting should extend to the bag you take home. Our coffee is protected in specialty bags sourced from our partners in the EU. These bags are crafted using mono-plastic materials, making them fully recyclable—a critical choice that reduces waste compared to standard multi-layer coffee bags. Furthermore, we ensure that the environmental impact of producing and shipping these bags is completely addressed through CO2 compensation programs. For our labels, we partner with a Danish company to print locally on environmentally friendly label foil. This ensures our labels are produced nearby and use material specifically chosen for its lower environmental footprint, allowing every element of your coffee experience to align with our commitment to quality and sustainable awareness.
