From the misty highlands of La Paz, Honduras, sacred to the Lenca people. In these hills it is like dawn slows time. This coffee finds it inspiration in that moment when night turns to day, a moment that is soft, still, and full of possibility. We call it the Hidden Hour.

Produced at Finca El Puente, which fittingly translates to "The Bridge," this coffee is the work of Marysabel Caballero and Moises Herrera. Their approach to coffee growing goes far beyond the soil; they act as a true bridge for their local community through sustainable practices and dedication to social impact. The Hidden Hour is our invitation to pause.

THE ORIGIN

Honduras, Finca El Puente, Marysabel Caballero & Moises Herrera

Located in the Marcala region within the department of La Paz, Honduras, Finca El Puente is renowned for producing some of the most spectacular coffees in Central America. The Caballero family has been cultivating coffee for four generations, and Marysabel, alongside her husband Moises Herrera, has elevated this legacy. The region's unique microclimate, characterized by cool, misty nights and warm days, creates an ideal environment for slow cherry maturation. This careful pacing in the highlands allows the beans to develop deep, complex sugars and a structured acidity. Beyond their exceptional terroir, Finca El Puente is celebrated for its commitment to biodiversity, soil health, and the prosperity of the local workers who carefully tend to the land.

THE PROCESS

Natural process. The coffee fruit is harvested at peak ripeness from the trees and then carefully sorted. Instead of removing the skin and pulp, the whole coffee cherry is kept intact around the seed (coffee bean) and laid out on drying beds or patios. Over several weeks, the coffee is meticulously monitored, turned, and raked to ensure even drying exposure and to prevent any unwanted fermentation. As the fruit slowly dries like a raisin under the Honduran sun, the seed inside naturally absorbs the rich, jammy sweetness and fruity esters of the surrounding pulp. Once fully dried, the hardened outer layers are milled off to reveal the green coffee bean. This careful, waterless method is what gives the cup its distinct notes of white grape, jam, and deep chocolate.

THE VARIETY

The Catuai varietal is known for its resilience and exceptional cup quality. Developed in the mid-20th century as a cross between the highly productive Mundo Novo and the compact Caturra varieties, it has found a perfect home in the high-altitude climates of Central America. While Catuai is known for its high yield and small stature—making it easier to harvest and resistant to strong winds—it is its flavor profile that truly shines when grown with intention.

Under the  care of Finca El Puente, this Catuai delivers a beautifully structured and versatile profile. It is defined by its rounded sweetness, presenting a luscious body with rich notes of chocolate and almonds, lifted by the bright, fruit-forward complexity of white grapes and jam. This variety stands as a testament to how careful farming and dedicated processing can unlock extraordinary flavors from a classic bean.

We believe that the care dedicated to sourcing and roasting should extend to the bag you take home. Our coffee is protected in specialty bags sourced from our partners in the EU. These bags are crafted using mono-plastic materials, making them fully recyclable—a critical choice that reduces waste compared to standard multi-layer coffee bags. Furthermore, we ensure that the environmental impact of producing and shipping these bags is completely addressed through CO2 compensation programs. For our labels, we partner with a Danish company to print locally on environmentally friendly label foil. This ensures our labels are produced nearby and use material specifically chosen for its lower environmental footprint, allowing every element of your coffee experience to align with our commitment to quality and sustainable awareness.
